It is partly because of abrasion and friction of grains produced by contact against themselves and/or against cone and concave. In this study the effect of different temperatures of brown rice on rice kernels' breakage during the whitening process was investigated. Khazar cultivar was utilized throughout the experiment. Rough rice samples were dried up to 10-11 percent moisture content. Samples were hulled to the point of 90±2% through a rubber roll husker. The samples were packed in plastic bags and stored in –13, 5, 18, 25, 35, 45 and 55 ºC. Whitening was performed through a pilot friction type whitener lasting for three different time intervals of 30, 35, and 40 seconds. A factorial experiment consisting of two factors of brown rice temperatures and different whitening times as based on a completely randomized design of six replications was taken into account. The results revealed that rice temperatures up to 25 ºC did not significantly affect milled rice yield. However yeild decreased in temperatures exceeding 25 ºC. The reduction was 1.94% when temperature was raised to 55 ºC. Broken grain percentage increased for about 3.7% when temperature increased to the 55°C. The lowest brightness index was observed when temperature was set at 5-25 ºC. At – 13 ºC and at 35-55 ºC the brightness index was recorded higher than those at the other temperatures.}, keywords = {Brown rice,temperature,Whitening,Recovery index,Breakage percen}, title_fa = {بررسی اثر دمای نگهداری بر خصوصیات کیفی برنج قهوه ای طی فرآیند سفید شدن}, abstract_fa = {یکی از عوامل شکستگی دانه‌های برنج در هنگام سفید شدن، حرارت ایجاد شده بر اثر مالش و سایش دانه‌ها به یکدیگر و به توری و توپی دستگاه سفید‌کن می‌باشد. در این پژوهش تاثیر اعمال دماهای مختلف برنج قهوه‌ای بر میزان شکستگی دانه‌های برنج در فرآیند سفید شدن بررسی شده است. به این منظور ابتدا شلتوک رقم خزر تا رطوبت 11-10 درصد خشک گردید. پوست‌گیری تا 2±90 درصد توسط پوست‌کن غلتک لاستیکی انجام شد. نمونه‌ها پس از بسته‌بندی در داخل بسته‌های پلاستیکی در دماهای  13- ، 5، 18، 25، 35، 45 و 55 درجه سلسیوس نگه‌داری شدند. فرآیند سفید کردن با سه تیمار زمانی 30، 35 و40 ثانیه توسط سفید‌کن مالشی آزمایشگاهی انجام شد. این آزمون براساس طرح کامل تصادفی در قالب فاکتوریل با دو فاکتور دمای برنج قهوه‌ای و زمان سفید شدن در 6 تکرار انجام شد. نتایج نشان داد بالا رفتن دما تا 25 درجه سلسیوس اثر معنی‌داری بر ضریب تبدیل برنج قهوه‌ای به برنج سفید نداشت اما دماهای بالاتر موجب کاهش ضریب تبدیل گردید. به‌نحوی که در دمای 55 درجه سلسیوس ضریب تبدیل تا 94/1 درصد کاهش نشان داد. با افزایش دما، درصد شکستگی افزایش پیدا کرد، به‌ویژه زمانی که دما از 25 به 55 درجه سلسیوس رسید، میزان خردشدن حدود 7/3 درصد افزایش یافت. شاخص درجه سفیدی در محدوده 5 تا 25 درجه سلسیوس کمترین مقدار را داشت. در دمای 13- و بالاتر از 25 درجه سلسیوس برنج سفید‌تر و روشن‌تر به دست آمد.}, keywords_fa = {Brown rice,temperature,Whitening,Recovery index,Breakage percen}, url = {https://ijbse.ut.ac.ir/article_35221.html}, eprint = {https://ijbse.ut.ac.ir/article_35221_b75d821651338ec7d6eb5663e23d3ded.pdf} }
