بهینهسازی عوامل مؤثر در پرورش جوجه گوشتی با استفاده از تلفیق سامانه ماهالانوبیس – تاگوچی و الگوریتم شبیهسازی تبرید
پیچیدگیها در سامانههای تولید به دلیل افزایش تعداد عوامل تأثیرگذار و اثرات متقابل بین این عوامل افزایش یافته است. بر اساس این نیاز، ابزارهای مناسبی برای تحلیل سامانههای پیچیده از جمله سامانه ماهالانوبیس - تاگوچی ابداع گردیده که میتوانند با استخراج روابط واقعی بین متغیرها، سامانهها را سادهتر و قابل درک نمایند. بنابراین در این مطالعه از سامانه ماهالانوبیس - تاگوچی توسعه یافته در کاهش تعداد متغیرهای مؤثر برای پرورش جوجه گوشتی که یکی از منابع پروتئینی مهم در ایران است، استفاده شد. در سامانه توسعه یافته نیز الگوریتم فراابتکاری شبیهسازی تبرید مبتنی بر جمعیت به کار گرفته شد. نتایج نشان داد که الگوریتم شبیهسازی تبرید توانایی بهینهسازی این مسئله را دارا میباشد و میتواند تعداد متغیرها را با توجه به وزنهای تابع هدف که توسط تصمیم گیرنده انتخاب میشود، کاهش دهد. همچنین در این مطالعه وزنهای مختلفی برای تابع هدف در نظر گرفته شد و نتایج و تأثیر وزنها بر تابع هدف و تعداد متغیرهای خروجی از الگوریتم مورد بحث و بررسی قرار گرفت. با در نظر گرفتن وزنهای مختلف برای تابع هدف، تعداد متغیرها از 35 به 10 در حالت اول، 11 در حالت دوم، 10 در حالت سوم و 21 متغیر در حالت چهارم کاهش پیدا کرد.

ویژگیهای رئولوژیکی و میکروبی پنیر شبهلبنی تهیه شده از ذرت شیرین حاوی کنسانترههای پروتئینی آبپنیر و شیر
پژوهش پیشرو با هدف دستیابی به فرمولاسیون بهینه پنیر آنالوگ برپایه شیرابه ذرت مشابه با پنیر سفید ایرانی کمچرب فراپالوده انجام گرفت. در این تحقیق، اثـر متغیرهـای پودر کنسانتره پروتئین آبپنیر (WPC) و پودر کنسانتره پروتئین شیر (MPC) هر کدام در سطوح 5، 10 و 15 درصد و شیرابه ذرت تهیه شده از دانههای ذرت شیرین در دو سطح استخراج 15 و 25 درصد (نسبت دانه ذرت به آب؛ حجمی/وزنی) بر ویژگیهای پروفایل بافت و کیفیت میکروبی نمونههای پنیر آنالوگ طی مدت 60 روز نگهداری در یخچال مقایسه گردید. نتایج نشان داد با افزایش درصد استخراج شیرابه ذرت، سختی و قابلیتجوندگی نمونههای پنیر آنالوگ کاهش و با افزایش مقادیر WPC و MPC، مقادیر سفتی، خاصیت صمغی و پیوستگی نمونهها افزایش یافت. براساس نتایج این تحقیق، نمونهی پنیر آنالوگ ذرت باکیفیت قابلقبول میتواند با استفاده از سطوح 15 درصد هر سه متغیر درصد استخراج شیرابه ذرت، WPC و MPC تهیه گردد.

کاربرد مدلهای شبکه عصبی مصنوعی (MLP و RBF) و ماشین بردار پشتیبان (SVM) به منظور تخمین میزان سایه در جمعکنندههای خورشیدی صفحه تخت در ایران
در این تحقیق از مدل شبکه عصبی مصنوعی و رگرسیون بردار پشتیبان بهمنظور تخمین میزان سایه در جمع کننده صفحه تخت خورشیدی با توجه به شرایط جغرافیایی ایران استفاده شد. دو نوع الگوریتم آموزش LM و BR همراه با تابع انتقال تانژانت سیگموئیدی و تعداد متنوعی از نورونها در لایه پنهان همراه با مدل اعتبارسنجی تقاطعی به منظور ایجاد مجموعه دادههای تصادفی مورد استفاده قرار گرفت. نتایج نشان داد که مدل MLP با الگوریتم آموزشی BR و ساختار (1-23-5) میتواند دادههایی با دقت بالا و شبیه به مقادیر واقعی ایجاد کند. میانگین آمارههای MAPE و R2 برای مدل فوق به ترتیب 10/0±42/0 درصد و 01/0±99/0، برآورد شد و نتایج آماری مقایسه میانگین، واریانس و توزیع آماری در سطح احتمال 95% بین دادههای واقعی و مقادیر پیشبینی شده، معنیدار نبودند. نتایج آنالیز حساسیت نشان داد که فاصله صفحه جاذب تا پوشش شیشهای مهمترین فاکتور تاثیرگذار بر ایجاد سایه است.

تاثیر عصاره آبی بره موم حاصل از روشهای مختلف استخراج بهعنوان نگهدارنده طبیعی در شیر خام
ویژگیهای ضد میکروبی و آنتیاکسیدانی عصاره آبی بره موم حاصل از روشهای مختلف استخراج (خیساندن، سوکسله، مایکروویو و اولتراسونیک) بر کیفیت شیر خام مورد بررسی قرار گرفت. ویژگیهای شیمیایی (pH و اسیدیته)، میکروبی (شمارش کلی، کلیفرم ، کپک و مخمر) و ارگانولپتیک (رنگ و بو) شیر حاوی عصاره 6 درصد در طی مدت نگهداری (۱۲ و ۹۶ ساعت به ترتیب در دمای ۳۰ و 5 درجه سلسیوس) مورد بررسی قرار گرفت. بیشترین مقدار ترکیبات فنلی کل و فعالیت آنتیاکسیدانی عصاره در روش سوکسله به ترتیب، ۱/0±4/7 (گرم/100گرم) و ۸/1±0/52 درصد حاصل شد. روش خیساندن با وجود کمترین مقدار ترکیبات فنلی کل و فعالیت آنتیاکسیدانی (6/0±6/2 گرم/100گرم و 2/2±0/26 درصد) به ترتیب نسبت به مهار رشد تعداد کل باکتریایی (log cfu/ml 0/0±0/6 و 0/0±9/6)، مخمرها (log cfu/ml 0/0±۵/4 و 0/0±0/4) و کلیفرم (log cfu/ml 1/0±1/5 و 0/0±1/4) در پایان زمان نگهداری به ترتیب در دماهای 5 و 30 درجه سلسیوس نسبت به گروه کنترل، اثر مناسبتری از خود نشان داد که نشاندهنده عملکرد بهتر این روش در استخراج ترکیبات موثر در مهار میکروارگانیسمها میباشد. عصاره بره موم حاصل از روشهای مختلف عصارهگیری در اکثر موارد مانع از کاهش pH و افزایش اسیدیته قابل تیتراسیون در طول زمان نگهداری در دو دما نسبت به کنترل شد. تاثیر منفی روی رنگ و بوی شیر خام در هیچ کدام از نمونهها مشاهده نشد. افزودن عصاره ماندگاری نمونهها را نسبت به کنترل در دمای 30 و 5 درجه سلسیوس، در کلیه روشهای استخراج بجز روش سوکسله به ترتیب 3 و 24 ساعت افزایش داد.

ارزیابی سه روش برای جداسازی دانههای کدو
با هدف بالا بردن کیفیت جداسازی دانههای کدو به بررسی سه روش جداسازی دانههای پوک از مغزدار پرداخته شده است. در روش اول جداسازی برپایهی ظرفیت گرمایی دانهها به کمک اندازهگیری دمای دانهها توسط دوربین حرارتی و بررسی روند سرد شدندانهها انجام شد. در روش دوم سرعت حد دانهها توسط محاسبات تئوری تعیین و سپس توسط آزمایش عملی به کمک یک فن مورد ارزیابی قرار گرفتند. در روش سوم نیز به کمک محاسبات تئوری و تعیین نیروی اصطکاک و الکترواستاتیک دانهها، کارایی این روش نیز به صورت عملی و توسط یک صفحه چرخان مورد بررسی قرار گرفت. این روشها بر اساس دقت، هزینه، زمان مورد نیاز فرایند، و تجهیزات استفاده شده مورد بحث و بررسی قرار گرفتند. در این بررسی مشخص گردید دقت جداسازی بر پایه ظرفیت گرمایی (100%) نسبت به سایر روشها بالاتر بوده و پس از آن به ترتیب جداسازی بر اساس سرعت حد (%93) و ضریب اصطکاک (86%) قرار دارند.

در این پژوهش، فیلم نانوکامپوزیت فعال آنتیاکسیدانی برپایه بیوپلیمر نشاسته حاوی اسانس دارچین و نانوفیبر کیتوزان (CHNF) تولید شد. هر دو ترکیب در غلظتهای صفر، 5/2 و 5 درصد به ترکیب فیلم نشاسته اضافه شدند و تأثیر آنها بر روی خواص بازدارندگی، ویژگیهای مکانیکی و مورفولوژیکی و خاصیت آنتیاکسیدانی فیلم نشاسته بررسی شد. همچنین نرخ رهایش اسانس از فیلمهای نانوکامپوزیت در دو دمای 4 و 25 درجه سلسیوس مطالعه شد. افزودن اسانس دارچین باعث افزایش نفوذپذیری نسبت به بخار آب (WVP) شد اما جذب رطوبت را کاهش داد. درحالیکه CHNF باعث کاهش قابل توجه در هر دو پارامتر شد. اسانس دارچین استحکام کششی فیلم نشاسته را کاهش داد اما CHNF باعث افزایش مقاومت کششی و کاهش درصد ازدیاد طول در فیلم نشاسته شد. نتایج آزمون XRD و FTIR ضمن تأیید پخش یکنواخت هردو ترکیب در بستر فیلم نشاسته، نشان دادند که افزودن آنها تأثیری بر خواص ساختاری فیلم ندارد و همچنین اتصالات قابل توجهی بین نانوذره، اسانس و رشتههای نشاسته ایجاد نشده است. اسانس دارچین بخصوص در غلظت 5 درصد اثر قابل توجهی در افزایش خاصیت آنتیاکسیدانی فیلم نشاسته داشت اما حضور CHNF باعث کاهش فعالیت آنتیاکسیدانی اسانس در فیلم شد. بررسی نرخ رهایش اسانس به داخل اتانول 96 درصد نشان داد که با افزایش دما از 4 به 25 درجه سلسیوس، میزان مهاجرت اسانس در همه نمونهها بهطور قابل توجهی افزایش مییابد. فیلمهای حاوی اسانس خالی بیشترین میزان رهایش را داشتند و در حضور CHNF، نرخ رهایش اسانس بهصورت کنترل شده درآمد. بهطور کلی نتایج این پژوهش نشان داد که با افزودن اسانس دارچین و نانوالیاف کیتوزان به فیلم نشاسته میتوان فیلمی با خواص کاربردی مطلوب و با رهایش کنترل شده تولید نمود.

امکانسنجی فنی و اقتصادی دستیابی به اهداف مختلف انرژی خالص صفر در کارخانه تولید بیواتانول
در این پژوهش، امکانسنجی دستیابی به هدف انرژی خالص صفر (NZE) بر اساس تعاریف مختلف، شامل سایت انرژی خالص صفر، انرژی اولیه خالص صفر، هزینه انرژی خالص صفر، آلایندگی انرژی خالص صفر و اکسرژی خالص صفر در کارخانه تولید بیواتانول زیست فرآورده سپاهان مورد مطالعه قرار گرفت. در بررسیهای فنی ضمن تعیین مقادیر انرژی مورد نیاز در هر رویکرد، مدلسازی تولید برق در نیروگاه فتوولتائیک متناظر بر اساس میزان تولید و مصرف انرژی کارخانه در نرمافزار سامانههای فتوولتائیک (PVsyst) و برنامه شبیهسازی سیستمهای گذرا (TRNSYS) انجام شد و دادههای تولید، مصرف، صادرات و تحویل انرژی سالیانه در هر رویکرد در شرایط لحظهای و در مقیاس ساعت استخراج گردید. با استفاده از دادههای به دست آمده، رویکردهای مختلف بر اساس شاخصهای مطابقت بار، خودمصرفی و خودکفایی برق مورد ارزیابی و مقایسه قرار گرفتند. سپس به منظور ارزیابی اقتصادی رویکردهای مذکور، شاخص اقتصادی β بر اساس تعریف ارزش خالص فعلی (NPV) در سه استراتژی قیمتگذاری الف) فروش کل تولید و خرید کل مصرف (BASA)، ب) اندازهگیری خالص مصرف (NEM) و ج) صورتحساب خالص (NB) تعیین گردید. بر اساس ارزیابیهای فنی، رویکرد هزینه انرژی خالص صفر، مناسبترین گزینه برای رسیدن به هدف NZE در این کارخانه بود. همچنین با در نظر گرفتن ملاحظات اقتصادی، رویکرد هزینه انرژی خالص صفر در استراتژی قیمتگذاری BASA با توان اسمی 2/1 مگاوات و شاخص خودمصرفی 2/84 درصد بهترین نتایج را در هر دو ارزیابی فنی و اقتصادی داشت. شاخصهای β و NPV در این رویکرد به ترتیب مقادیر 97/1 و 1,579,512 دلار را داشتند و سرمایهگذاری در این سامانه پس از 1/10 سال از شروع فعالیت وارد مرحله سودآوری (NPV=0) شد.

نوسانات عرضه گوشت مرغ سلامت محور و سازگار با محیط زیست در بازار منجر به بروز نوسانات قیمت این محصول خواهد شد. از طریق شناسایی مسائل و موانع زنجیره تأمین گوشت مرغ میتوان بهبود عملکرد پایدار صنعت مرغداری و جلوگیری از نوسانات قیمت گوشت مرغ در بازار را تحقق بخشید. بنابراین، در مطالعه حاضر، موانع و مشکلات موجود در زنجیره تأمین پایدار صنعت غذایی گوشت مرغ مورد ارزیابی قرار گرفت. برای این منظور، محدوده تحقیق شهرستان شیراز در استان فارس در نظر گرفته شد. دادهها بهصورت مصاحبه عمیق از کارشناسان سازمان امور پشتیبانی دام، کارشناسان وزارت جهاد کشاورزی، محققان دانشگاهی و شماری از تولیدکنندگان برتر مرغ گوشتی، مشاهده اسناد و مدارک جمعآوری شده و مشاهده مستقیم محقق گردآوری شد. سپس با استفاده از تئوری بنیانی، موانع و مشکلات زنجیره تأمین پایدار جهت بهبود عملکرد این سیستم استخراج گردید. نتایج نشان داد که پنج چالش اصلی اثرگذار بر زنجیره تأمین پایدار گوشت مرغ، شامل عملکرد ضعیف و عدم توسعه زیرساختهای لجستیکی (ادغام 8 مفهوم کلیدی)، مشکلات و موانع متعدد بازاریابی در فرایند زنجیره تأمین گوشت مرغ (ادغام 7 مفهوم کلیدی)، اثرات منفی زنجیره تأمین گوشت مرغ بر کیفیت محیطزیست (ادغام 6 مفهوم کلیدی)، عدم توجه به مشتریمداری و ترجیحات مصرفکننده (ادغام 3 مفهوم کلیدی) و پائین بودن تقاضای مرغ سالم در کشور (ادغام 4 مفهوم کلیدی) میباشد. شناسایی مشکلات و موانع زنجیره تأمین گوشت مرغ میتواند سیاستگذاران را در جهت بهبود عملکرد این زنجیره رهنمون سازد و عرضه به موقع گوشت مرغ سلامت محور و سازگار با محیط زیست با قیمت مناسب را تحقق بخشد.

ساخت و توسعه ماشین مکانیکی تمیزکنندهی سطح آرایههای فتوولتائیک
گرد و غبار میتواند با ایجاد آسیبهای فیزیکی، تضعیف تابش رسیده و افزایش درجه حرارت سبب کاهش بازده یک آرایهی فتوولتائیک شود. تمیزکاری آرایهها درگیر مسائلی مانند اتلاف آب، انرژی و زمان است. یک وسیله مکانیکی کارآمد میتواند محیط بزرگی را در زمانی به مراتب کمتر از نیروی انسانی تمیز نماید. در تحقیق حاضر ساخت و مطالعهی عملکرد یک ماشین تمیزکننده مکانیکی بررسی شد. آزمایشهایی با دو عامل نسبت سرعت خطی معادل برس به سکوی تمیزکننده و نوع شوینده، هرکدام در سه سطح، در قالب طرح کامل تصادفی و سه تکرار انجام گردید. ارزیابیها نشان داد اثر عامل نسبت سرعت بر حذف گرد و غبار پنل در سطح 5 درصد معنیدار است؛ از طرفی اثر هر دو عامل آزمایش، در سطح 5 درصد بر افزایش توان معنیدار بود. نتایج نشان داد ماشین تمیزکننده میتواند با کاهش غلظت گرد و غبار، توان هر پنل 280واتی را تا 40وات و بازده را تا 4درصد افزایش دهد.

طراحی و ساخت دستگاه برش دقیق ساقه سبزیهای خوراکی
در فرآوری سبزیها و همچنین آماده کردن برای مصرف تازه خوری، قسمت برگی سبزی از ساقه بهصورت دستی و غیرمکانیزه جدا میگردد. این تحقیق بهمنظور طراحی و ساخت یک دستگاه خودکار برای برش دقیق ساقه سبزیهای برداشت شده از مزرعه انجام گرفت. برای تشخیص محل برش مناسب از بینایی ماشینی استفاده شد. بدینصورت که پس از قرار دادن محصول بر روی نوار نقاله، بهصورت خودکار تصویربرداری میشود و پس از تشخیص محل برش، یک مکانیزم برشی قسمت برگی گیاه را از ساقه آن جدا میکند. سامانه برش طراحی شده برش نمونهها را با دقتی حدود 3 میلیمتر انجام داد. برای تشخیص محل برش و انجام آن حدود 4 ثانیه زمان صرف میشود، درنتیجه بیشینه ظرفیت دستگاه برابر با 15 برش در هر دقیقه است. محصول خروجی دستگاه در مواردی که سبزیهای ورودی بهصورت یکدست و تازه برداشت شده بودند، کیفیت مناسبی داشت.

بررسی ویژگیهای فیزیکوشیمیایی روغن زیتون فرابکر استحصال شده از رقم کرونائیکی استان گلستان طی انبارداری
تشخیص و تعیین خواص فیزیکوشیمیایی، ترکیبات موثره روغن زیتون و پایداری اکسایشی آن طی انبارداری از اهمیت خاصی برخوردار است، لذا در این پژوهش برخی از ویژگیهای روغن زیتون فرابکر حاصل از میوه زیتون رقم کرونائیکی طی دو سال انبارداری در دمای 4 درجه سلسیوس و در تاریکی بررسی شد. نتایج نشان داد که عدد اسیدیته، عدد پراکسید، عدد آنیزیدین و مقدار موم افزایش و میزان ترکیبات غیرقابل صابونی، استرول کل و فنول کل و نیز فعالیت آنتیاکسیدانی کاهش یافت. در تعداد کربن معادل تریآسیلگلیسرولها تغییر حائز اهمیتی مشاهده نشد (05/0

ارزیابی عملکرد و آلایندگی موتور تحت تاثیر سوخت دیسترول
کاهش روز افزون منابع نفتی جهان و افزایش مشکلات زیست محیطی، نیاز به استفاده از منابع سوختی دیگر به منظور جایگزینی دیزل و بنزین را تشدید میکند. بیودیزل، سوختی از روغنهای گیاهی یا چربیحیوانی است. هدف از این تحقیق ارزیابی کاربرد سوخت دیسترول بر عملکرد و آلایندگی موتور تراکتور مسی فرگوسن (MF-399) میباشد. برای ارزیابی عملکرد و آلایندگی موتور تراکتور MF-399، در این تحقیق از سوخت دیسترول استفاده شد. متغیرهای مستقل شامل درصد بیودیزل، درصد اتانول و سرعت محور تواندهی و متغیرهای وابسته شامل گشتاور، مصرفویژه سوخت، هیدروکربنهای نسوخته، اکسیدهای نیتروژن، مونوکسید کربن و دیاکسید کربن میباشد. سوخت بیودیزل از روغن کرچک تولید گردید. عملکرد و آلایندهها موتور با استفاده از ترکیبات بیودیزل، اتانول و دیزل به ترتیب 5 تا 15، 2 تا 6 و 79 تا 93 درصد ارزیابی شد. نتایج نشان داد که دور PTO بر روی کلیه متغیرهای وابسته ولی درصد اتانول فقط روی تولید گشتاور و درصد بیودیزل بر مصرفویژه سوخت و تولید مونوکسیدکربن و دیاکسیدکربن (در سطح یک درصد) موثر بود. اکسیدهای نیتروژن تولیدی موتور برای ترکیب دور و بیودیزل (rpm950، 15%) و (rpm1000، 5%) به ترتیب ppm2490 و 1198 بود که کاهش 51% نشان داد.
