Effects of carboxymethyl cellulose coating with nanoclay and peppermint essence on the characteristics of egg during storage

Abstract

In recent years the use of polysaccharides as biodegradable coatings for food has become important. In this study, the effect of carboxymethyl cellulose-based coating containing clay and peppermint oil on quality characteristics such as Haugh and yolk index, egg weight and pH during storage in the refrigerator and the room condition were investigated. For this purpose, the coating formulation using a central composite design based on Tensile strength, Elasticity and Water vapor permeability of coatings were optimized. so that the optimal sample was consisted of clay 3.48 percent and essential oil 1.35 percent. Then, using a completely randomized design eggs uncoated, coated with carboxymethyl cellulose and with optimal coating were compared the evaluation results of the qualitative characteristics indicate significant differences among the treatments with the control. Also, essence has significant effects on all the characteristics of eggs during storage. Generally, all the qualitative features of optimal coating samples with less deterioration during storage in the refrigerator and the room, compared to the control samples were associated. As a result of using this type of coverage beside of controlling storage temperatures, the shelf life of eggs will increase a lot.
