چکیده

در این تحقیق، تأثیر رقم، زمان برداشت، و اندازۀ میوه روی خصوصیات مکانیکی پوست، جرم مخصوص، و مقاومت انار در برابر بارگذاری فشاری بررسی شد. نتایج نشان داد سه رقم انار مطالعه‌شده (اردستانی، شیشه‌کپ و ملس) پوسته‌هایی با ضخامت‌های متفاوت داشته‌اند که این امر موجب تفاوت در نیروی لازم برای نفوذ میوۀ کامل انار به میزان 10‌درصد می‌شد. رقم شیشه‌کپ ضخیم‌ترین پوسته را به نسبت دو رقم دیگر داشت. رقم‌های اردستانی و شیشه‌کپ به ترتیب مقاومت‌های 453 و 428 نیوتن در برابر نیرو‌های فشاری از خود نشان دادند. رقم ملس کمترین مقاومت را در برابر بارگذاری فشاری داشت که این مقاومت با گذشت زمان و تأخیر در برداشت به میزان 15‌درصد کاهش پیدا می‌کرد. همچنین مشخص شد که با افزایش اندازۀ میوه جرم مخصوص به میزان 39‌درصد کاهش و مقاومت آن در برابر بارگذاری فشاری، 25درصد افزایش می‌یافت.

چکیده English

In this research, the effect of variety, harvesting time and fruit size were investigated on the mechanical properties of skin, density and mechanical strength. The results showed that pomegranate cultivars (Ardestani, Shisheh-Cap and Malas) had different skin thickness resulting difference in forces required for penetration of pomegranate fruit (10%). The skin of Shisheh-Cap variety was thicker than others. Mechanical strength of Shisheh-Cap and Ardestani varieties were 453 and 428 N respectively. The results revealed that Malas variety had the least strength against compression forces and it decreased (15%) with delay in harvesting of pomegranate fruit. It was shown that by increasing of fruit size, the density reduced (39%) and the mechanical strength increased (25%).
