شناسایی موانع و مشکلات زنجیره تأمین پایدار صنعت غذایی گوشت مرغ با استفاده از تئوری بنیانی

چکیده

نوسانات عرضه گوشت مرغ سلامت محور و سازگار با محیط زیست در بازار منجر به بروز نوسانات قیمت این محصول خواهد شد. از طریق شناسایی مسائل و موانع زنجیره تأمین گوشت مرغ می‌توان بهبود عملکرد پایدار صنعت مرغداری و جلوگیری از نوسانات قیمت گوشت مرغ در بازار را تحقق بخشید. بنابراین، در مطالعه­ حاضر، موانع و مشکلات موجود در زنجیره تأمین پایدار صنعت غذایی گوشت مرغ مورد ارزیابی قرار گرفت. برای این منظور، محدوده تحقیق شهرستان شیراز در استان فارس در نظر گرفته شد. داده­ها به­صورت مصاحبه­ عمیق از کارشناسان سازمان امور پشتیبانی دام، کارشناسان وزارت جهاد کشاورزی، محققان دانشگاهی و شماری از تولیدکنندگان برتر مرغ گوشتی، مشاهده اسناد و مدارک جمع­آوری شده و مشاهده مستقیم محقق گردآوری شد. سپس با استفاده از تئوری بنیانی، موانع و مشکلات زنجیره تأمین پایدار جهت بهبود عملکرد این سیستم استخراج گردید. نتایج نشان داد که پنج چالش اصلی اثرگذار بر زنجیره تأمین پایدار گوشت مرغ، شامل عملکرد ضعیف و عدم توسعه زیرساخت‌های لجستیکی (ادغام 8 مفهوم کلیدی)، مشکلات و موانع متعدد بازاریابی در فرایند زنجیره تأمین گوشت مرغ (ادغام 7 مفهوم کلیدی)، اثرات منفی زنجیره تأمین گوشت مرغ بر کیفیت محیط‌زیست (ادغام 6 مفهوم کلیدی)، عدم توجه به مشتری‌مداری و ترجیحات مصرف‌کننده (ادغام 3 مفهوم کلیدی) و پائین بودن تقاضای مرغ سالم در کشور (ادغام 4 مفهوم کلیدی) می­باشد. شناسایی مشکلات و موانع زنجیره تأمین گوشت مرغ می­تواند سیاست­گذاران را در جهت بهبود عملکرد این زنجیره رهنمون سازد و عرضه به موقع گوشت مرغ سلامت محور و سازگار با محیط زیست با قیمت مناسب را تحقق بخشد.

Fluctuations in the supply of health-oriented and environmentally friendly chicken meat in the market will lead to price fluctuations of this product. By identifying the barriers and problems of the chicken meat supply chain, it is possible to improve the sustainable performance of this industry and prevent price fluctuations. Therefore, in the present study, the barriers and problems were evaluated in the sustainable supply chain of the chicken meat industry. For this purpose, ​​Shiraz County in Fars province was considered. Data were collected through in-depth interviews with experts from the Livestock Support Organization, experts from the Ministry of Jihad for Agriculture, academic researchers and a number of top producers, observation of documents and direct observation of the researcher. Then, barriers and problems of sustainable supply chain were extracted to improve the performance of this system using grounded theory. The results showed that there are five main challenges affecting the sustainable supply chain of chicken meat, including poor performance and lack of logistics infrastructure development (integration of 8 key concepts), marketing problems and barriers in the process of supply chain (integration of 7 key concepts), negative effects of the supply chain of chicken meat on the quality of the environment (integration of 6 key concepts), lack of attention to customer orientation and consumer preferences (integration of 3 key concepts) and low demand for healthy chicken in the country (integration of 4 key concepts). Identifying the barriers and problems of the chicken meat supply chain can guide policy-makers to improve the performance of this chain and realize the supply of health-oriented and environmentally-friendly chicken meat at a reasonable price.
