بررسی تغییرات ویژگی‌های کیفی خلال سیب‌زمینی طی خشک‌کردن مقدماتی و پایان سرخ‌کردن

چکیده

با توجه به مشکلات نگهداری، حمل‌ونقل، و نوسان فصلی قیمت سیب‌زمینی تازه، تولید فراورده‌های آمادۀ مصرف چون خلال سیب‌زمینی نیمه‌‌سرخ‌‌شده اهمیت ویژه‌ای دارد. کیفیت خلال سیب‌زمینی نیمه‌سرخ‌شده، اغلب برحسب ظاهر، رنگ، طعم، بافت، و میزان جذب روغن سنجیده می‌شود. از مراحل مهم در پیش‌فراوری این محصول، مرحلۀ خشک‌کردن مقدماتی است. این مرحله به‌دلیل ‌آنکه جذب روغن را کاهش می‌دهد و خواص ارگانولپتیک محصول را با افزایش تردی آن بهبود می‌بخشد، شایان ‌توجه است. برای انجام آزمایش‌ها، خلال‌های سیب‌زمینی با ابعاد 8/0×8/0×8 سانتی‌متر تهیه‌شدند و پس از آنزیم‌بری در آب 75 درجۀ ‌سلسیوس به‌مدت 10 دقیقه، با خشک‌کن جریان هوای گرم در‌ دماهای50، 60، 70، و 80 درجۀ ‌‌سلسیوس تا رطوبت 70 درصد بر‌اساس وزن مرطوب خشک‌ گردیدند. در‌پایان، در روغن با دمای 180 درجۀ ‌سلسیوس به‌مدت 4 دقیقه سرخ شدند. خصوصیات کیفی بررسی‌شده در طول دورۀ خشک‌کردن، رنگ و بافت، و در پایان سرخ‌کردن، رنگ، بافت، و میزان روغن باقیمانده بود. نتایج آزمایش‌ها نشان ‌داد که برخلاف رنگ و میزان روغن باقیمانده درخلال، کیفیت بافت آن تحت تأثیر دمای خشک‌کردن است و با خشک‌کردن در دمای 70 درجۀ سلسیوس تا رسیدن به رطوبت 75 درصد براساس وزن مرطوب، بهترین کیفیت حاصل می‌شود.

چکیده [English]

Due to problems in storage, transport and price fluctuation of fresh potato, production of ready-to-use products like French fries is of particular importance.One of the important steps in product processing is pre-drying.Sticks with 0.8*0.8*8 cm dimensions were prepared, blanched with hot water at 75°C for 10 minutes and dried at four different air temperatures of 50, 60, 70 and 80°C to moisture content of 70٪. Finally, frying at 180°C for 4 minutes was performed. Color and texture were evaluated during pre-drying whereas color, texture and oil uptake of samples were investigated after frying. The results showed that drying temperature was much effective on product texture while no difference was observed on color and oil uptake of potato sticks. The best quality will be obtained with drying at 70°C to moisture content of 75٪.
