بررسی خصوصیات فیزیکوشیمیایی، بافتی وحسی دسر لبنی فرا سودمند دارای مالت جو بدون پوشینه

چکیده

دسرهای شیری محصولاتی بر پایه شیر هستند که نقش مهمی در حفظ رژیم غذایی بشر به دلیل مواد مغذی موجود در آن دارند. هدف از این پژوهش بررسی اثر افزودن آرد مالت جو بدون پوشینه و ژلاتین بر ویژگی­های مختلف دسرهای شیری با هدف بهبود ارزش تغذیه ای و ویژگیهای کیفی آنها است. دسرها با استفاده از غلظت­های مختلف ژلاتین (0، 5/0، 1، 5/1 و 2 درصد) و نسبت مالت به نشاسته (0، 25، 50، 75 و 100 درصد) تولید شده و سپس ویژگی­های فیزیکوشیمیایی، بافتی و حسی  آن ها مورد بررسی قرار گرفت. نتایج نشان داد که دسرهای دارای نسبت بالای مالت به نشاسته، پروتئین، خاکستر و چربی بیشتر و دسرهای حاوی ژلاتین بیشتر، پروتئین، خاکستر و ماده خشک بیشتری داشتند. pH نمونه های دسر شیری نیز تحت تاثیر زمان نگهداری و نسبت مالت و ژلاتین قرار گرفت. نتایج آزمون های بافت نشان دادند که با افزایش غلظت ژلاتین، ویژگی­های بافتی (سختی، قوام و پیوستگی) دسر افزایش می­یابد. ارزیابی ویژگیهای حسی نمونه ها حاکی از آن است که دسرهای دارای مقادیر بالای مالت (نسبت نشاسته به مالت 25 به 75 و 0 به 100) و ژلاتین (5/1 و 2 درصد) از بالاترین مقبولیت نزد ارزیابان حسی برخوردار بودند.

Milk-based dairy desserts have important role in human diet because of their nutritional values. The aims of this study were to investigate the effect of hull-less barley malt flour and gelatin adding on different aspects of dairy dessert with the goal of increasing nutritional value and quality parameters. Desserts were prepared by different gelatin concentration (0, 0.5, 1.0, 1.5 and 2%) and malt to starch ratio (0, 25, 50, 75 and 100%) and their physicochemical, textural and sensorial properties of them were analyzed. Results showed that desserts with higher malt to starch ratio had higher protein, ash and fat contents and desserts containing higher gelatin had high protein, ash and dry matters. In all samples during storage for 10 days, pH increased. Also pH decreased with the increase in malt and gelatin precentages. Textural analysis showed that the hardness, consistency and cohesiveness of samples were increased by increasing the gelatin concentration. Sensorial evaluation of dessert samples showed that the dessert with higher level of malt and gelatin (starch to malt ratio: 25 to 75 and 0 to 100, gelatin: 1.5 and 2%) had the highest acceptability among the panelists.
