بررسی اثر استفاده از پوشش کیتوزان، بسته‌بندی نانو اکسید سیلیس و اتمسفر اصلاح شده بر خواص قارچ دکمه-ای در طول دوره نگهداری

چکیده

در این تحقیق روش­هایی همچون پوشش کیتوزان، فیلم نانو کامپوزیت و اصلاح اتمسفر درونی بسته­بندی جهت حفظ کیفیت قارچ سفید دکمه­ای در طول دوره نگهداری مورد استفاده قرار گرفته است. قارچ برداشت شده در دو گروه بدون پوشش و با پوشش (کیتوزان با غلظت یک درصد) تقسیم بندی شدند و در سه نوع بسته­بندی (فیلم معمولی PVC، فیلم حاوی ذرات نانو اکسید سیلیس و فیلم نانو به همراه مپ) قرار گرفتند. بسته­های نانو + مپ حاوی 10 درصد اکسیژن، 10 درصد دی­اکسید کربن و 80 درصد نیتروژن بودند. نمونه­ها به مدت 10 روز و در دمای 4 درجه سلسیوس قرار داده شدند. پارامترهای فیزیکی (رطوبت و شاخص­های رنگ)، پارامترهای شیمیایی (pH و TSS) و پارامترهای مکانیکی (مدول الاستیسیته و نیروی نفوذ) به صورت یک روز در میان اندازه­گیری و محاسبه شدند. از طرفی تغییرات گازهای اکسیژن و دی­اکسید کربن نیز در طول دوره نگهداری مورد بررسی قرار گرفتند. نتایج نشان دهنده تاثیر معنی­دار (در سطح 1 و 5 درصد) پوشش کیتوزان، نوع بسته­بندی، دوره نگهداری و اثرات متقابل آنها بر پارامترهای اندازه­گیری شده بودند. استفاده از فیلم نانو به دلیل نفوذپذیری کم نسبت به گازهای اکسیژن و دی­اکسید کربن و همچنین اتمسفر اصلاح شده در کنترل تنفس قارچ و حفظ خواص فیزیکی، شیمایی و مکانیکی آن تاثیر مثبت داشت.

In this research, some methods such as chitosan coating, nanocomposite film and modified atmosphere packaging were used to preserve button mushroom quality during storage time. Harvested mushrooms were divided in 2 groups, with and without coating (1% chitosan coating), then packed in 3 types of packages (common, Nano and Nano+MAP packages). Nano+MAP packages were contain 10% O2, 10% CO2 and 80% N2. All samples were placed at 4 °C for 10 days. Physical (moisture and color indecies), chemical (pH and TSS) and mechanical properties (Emod and Fmax) were measured and calculated every other days. In the other hand, O2 and CO2 changes were also measured during storage time. The results showed that chitosan coating, type of packaging, storage time and their mutual effects had significant effects on measured and calculated parameters. Application of nanofilm due to low permeability to O2 and CO2, and also MAP condition had positive effect on control of respiration and preservation of physical, mechanical and chemical properties of mushroom.
